Yes you can. I buy a large piece, peel it then chop it into pieces (about 1" each as that's what most recipes seem to ask for), then grate them from frozen when I need them.0

OK, so we're car-less at the mo (through choice, seeing if we can manage without), so did an online Sainsbobs shop - we walk into town for the butcher/market on a Saturday and are planning on trying to have a supermarket delivery once every 2/3 weeks.
I'm a bit of a dummie when it comes to practical things, and ordered 0.25kg of fresh ginger thinking it would be 25g. Oh dear.
So my question is, could I freeze it? Would it be in whole portions, or could I grate it & freeze in portions? Ideas please!0 -

Yes, it can be frozen. How is up to you:- Freeze it whole
- Freeze it in chunks
- Peel it and freeze it in chunks
- Peel it and cut it into coins and freeze it
- Peel it and grate it and freeze it in ice-cube trays
- Peel it and grate it and mix it with garlic and freeze it in an ice-cube tray
- Peel it and grate it and mix it with garlic and chillis and oil and freeze it in an ice-cube tray

I freeze it whole and then grate what I need from frozen - no need to peel as the peel gets left behind on the grater. Far less work than peeling and then grating fresh ginger.
