Storing root ginger

Hello
I have a stick of root ginger that frankly its going to take us months to get through!
any tips for storing it? I thought about chopping it into thin slices and freezing them.
Any other ideas or reasons why this wouldn't work?

I freeze mine in chunks (just snap bits off the root and keep them in a bag in the freezer). It's no hassle to peel and chop it from frozen and it make very little difference to the flavour.
Or, if you've got any spare brandy you can put some in a jar and fill the jar up with the alcohol. That preserves it and as a bonus you have gingery brandy to use in baking. I'd imagine you could do this with other spirits too.0 -
Thin slices frozen works very well. I also freeze slices of left over lemon and make lemon and ginger tea with 1 slice of lemon and 2 of ginger.
If you use it grated - you can peel and grate and freeze in ice cube trays of the amounts you tend to use.0 -

I'd never thought of freezing it before! Though TBH we use so much of it in our house that it doesn't last long enough to need freezing!!0
