6 people - 4 kids - 3 vegies. Meals for <£1

6 people - 2 adults + 4 kids - 3 veggies (one of whom doesn't like vegetables).

Any ideas for Meals for <£1 (total)

My main staples at the moment

- 6x Tesco Vlaue noodles (=6x10p) + some peas/sweetcorn
- 6x Sainsbury value Pittas (2x6 for 70p so 35p) with puree (5p worth) & cheese (about 100g £2 for 400)
- Baked potatoes and cheese/beans (just a bit over £1)

Can get to Sainsbury, Waitrose, Tesco (online) and Somerfield

Any other ideas?

    Pasta? could make bakes with veg and cheese or just mix with veg. You can make batches of pasta sauce very easily and cheaply with an onion, herbs and tinned tomatoes :)

    Rice goes a long way too.

    ETA sainsburies have quorn chicken style pieces and quorn mince on offer for £2 eac for quite large packs. Even my ultra fussy dd2 didn't notice she was not eating real chicken in her wraps, lol! We are a family of 8 and one big pack was plenty, you could probably get away with using half a pack per meal, would be nice in pittas or with pasta, rice, noodles, everything!

  • to keep your meals to under a £1 for the 6 of you, i would imagine you would all need to eat as much vegetarian food as possible.
    Pasta with hm tomato sauce. use 2 tins basic chopped tomatoes, 1 onion, 1 tsp mixed herbs and 1 cup of water and 1 stock cube. Simmer for half an hour. serve on pasta

    Lentil dhal with rice.

    spanish omelette, eggs, potatoes, sweetcorn, handful of peas

    Vegetable chilli. 1 tin tomatoes, 1 tin kidney beans, 1 onion, textured soya protein soaked in water for 10 minutes, vegetable stock cube, chilli powder. Simmer all ingredients until nice and thick, adding more water if needed - serve with rice, potato, or pasta.

    Sweetcorn burgers. Mash some potatoes, mix in large tin of sweetcorn and one egg, season. make into burgers and bake in oven. Serve with baked beans.

    Pancakes filled with ratatouille. Make some pancakes and fill with ratatouille made from courgette, onions, chopped tomatoes, tin basic mushrooms, 1 stock cube that have all been simmered together.until vegetables are soft.

    Lentil and tomato soup with hm bread- 6 oz red lentils, 1 onion, 2 stock cube, 1 tin chopped tomatoes, 1 1/2pts water. Simmer until lentils are soft

    rice, tuna and sweetcorn, stuffed into value pittas, with a dollop of value curry sauce in each.

    stuffing burgers. 1 packets value stuffing mix, made up with directions on packer, mix with lots of mash potato, form into burger and bake in over, serve with some in season veg or frozen, with some vegetable gravy

    egg and chips! bag of chips from lidls around 55p for oven chips.

    vegetable curry and rice- tin of value curry sauce, potatoes, carrots, onions.
    par boil vegetables until starting to soften and then mix into curry sauce and either finish cooking on the hob or put in slow cooker for day!

  • i have been looking through my website i was building of frugal meals, these may be of use also!

    tuna and sweetcorn lasagne, with home made bread

    8 value lasagne sheets
    1 tin tuna
    1 400g tin sweetcorn
    1 pt vegetable stock
    1 garlic clove
    1 onion diced
    1/2pt milk.
    1 1/2oz flour
    2 tablespoons of butter

    fry the onion and garlic until softened, add the flour, mix, then gradually add the vegetable stock and milk, add tuna flakes and sweetcorn and bring to a simmer. The sauce will stay very runny.

    Spoon half the mix into a lasagne dish,cover with 4 lasagne sheets, spoon over remaining half of the sauce/tuna/sweetcorn, then cover with last 4 lasagne sheets.

    I then, grate some cheese over the top of the lasagne sheets, and then spoon a little water over the top, so that the top layer of lasagne sheets dont dry out.

    Bake in the oven for 40 minutes. Serve with lots of fresh vegetables or garlic bread and salad.





    butternut squash and lentil lasagne, this is a cheap meal when you can get the squash on offer at lidls for about 49p a squash
    1 chopped onion
    1 tsp cumin
    5 carrots
    1 squash
    200g red lentils
    1 litre vegetable stock
    1 tsp basil
    value lasagne sheets
    grated cheese
    Fry onion, carrots and squash in a little oil for 5 minutes, then add all the other
    ingredients and cook until veg and lentils are soft.
    Layer up the mix with lasagne sheets, and top with grated cheese. bake in oven 180'c for about 40-45 minutes.

    spicy parsnip soup and home made bread

    2 parsnips, peeled and chopped
    1 apple, peeled, cored and chopped
    1 small potato
    1 pint vegetable stock
    1 tsp garam masala
    this should serve 2-3, so double up for more!!!

    bring all ingredients to the boil and reduce to a simmer, cook for a further 20 minutes until vegetables are soft. liquidise and season with salt and pepper. Suitable for freezing.


    Easy Vegetable Pie

    Make up some pastry with 8oz flour, 4oz butter and some water- pour flour in a bowl, mix in butter to make breadcrumbs, add small amount of water to make dough.

    10oz cooked left over vegetables
    Can of mushroom soup
    1 tsp mixed herbs
    pepper and a little milk

    put the vegetables in a shallow pie tin, mix in herbs and soup, top with pastry and bake for 30 minutes until golden.

    I have searched for years to find a ready made vegetable pie that tastes great, and nothing ever does,always tasting of cheese powder, yuck. This is the best!!!

    Lentil Dhal Recipe


    I play around with this one, adding what i fancy to the basic recipe, carrots, mushroom, peas etc whilst it is cooking. Sometimes i add curry powder for a spicy version. It makes a lovely pate cold, if you make it without the added extras!
    serves 4-6

    12 oz red lentils
    2 onions
    2 stockcubes mixed with 1 1/2pts of water
    1/2 tsp dried mixed herbs

    Put all in ingredients in a pan, and bring to the boil, reduce hear and simmer for 15 minutes until lentils are cooked and have absorbed the liquid.

    Fruity veg curry

    Tin tesco value curry sauce 15p
    onion
    around 6 potatoes (cubed)
    peas
    sweetcorn
    handful raisins/sultanas

    I par boil the potatoes then cube. Soften onion then add all ingredients and simmer for a while. Makes a big pan and would guess for less than £1. My kids love it and we also have leftovers in wraps the next day.

    Baked bean bake

    2 tins baked beans
    slices of par boiled potatoes
    sliced tomatoes
    grated cheese
    1 onion chopped

    Soften onion, put some beans in an oven dish, add some onion, layer of sliced potato and so on till the top layer of potato. Put slices of tomatoes on top and grated cheese over it.

    You can add any ham, cooked sausages or bacon you might have, mushrooms, peppers etc. I added a dash of Worcestershire sauce.

    Cover and cook for an hour, then uncover for 20 mins.

    Sausage and mash with gravy and peas would be cheap. We had that last night using Lidl sausages, around £1 for 8 in a packet.

  • Chick peas are about 33p a tin and we love them in a home made tomato and veggie sauce with either rice or pasta, spice it up to add variety. A sprinkle of grated cheese on top adds a nice taste too.

    Noodles frozen veg and a bit of quorn all boiled up and smothered in either gravey (from granules) or the cheap curry sauce goes down well.

    Oven chips and baked beans is cheap and cheerful.

    I have some left over potatoes and peas in the freezer so will try this tomorrow, thanks :)

    I am all for saving money and cutting back where you can, but I honestly can not see you feeding 6 of you on £1!

    I mealplan weekly and our budget meals are:

    Roasts and stretch the meat (meat, spuds,yorkies & 2/3veg)
    Shepherds Pie & 2/3Veg
    Spagbol
    Sausages (toad in hole, cassarole etc)
    Bubble & Squeak
    Chilli & Rice
    Curry & Rice

    There are 3 of us and I generally spend £30-£45pw on food, but we have the recomended amount of F&V daily etc etc. Our main meal is usually about 30-50p a portion, but would really struggle at less than 20p each per meal!
