I have lemon balm and use it quite a lot;
It makes a lovely herb tea - stuff stalks and all into the teapot and pour on boiling water. Have hot or cold sweetened with sugar or honey to taste.
Young leaves are great in a mixed green salad.
Chop leaves and add to grated carrot - dress with vinagrette or honey and mustard dressing.
Chopped leaves are also good with a finely chopped or grated courgette salad as well.
Plus....if you can live with the seedlings everywhere Lemon Balm is a WONDERFUL plant for bees!!
With Bees becoming scarcer it's a good reason to plant it - if you remember to trim back the flowered bits when they've gone over you can reduce the self-seeding muchly :T0
