travel insurance - car touring holiday - help please

1st time message, any help greatly appreciated.
We're travelling to the USA, hiring a car (with the associates car insurances in terms of 3rd party accident cover etc) and touring round to see as many sights as we can. There will be times when we're in-between hotels and need to stop enroute. This will mean that we'll have to leave the car with all of our luggage and valuables. Smaller items we can take with us (passport, money etc) my concern is the other items.
Looking through some travel insurance policies regarding luggage they only seem to cover luggage when in a locked boot (eg if its a hatchback it has to be under the parcelshelf). we're going to need a minivan/MPV and on previous experience these have blacked out windows but the boot is basically the space behing the back seats and there's no parcelshelf so once your in the car you've got access to the boot space.
Because the hire company can't guarentee the exact model car we get what do we do?
If we get there and find the car model doesn't have a 'secure' boot does that then mean that none of our stuff is covered?
does anyone have any recommendations for travel insurance for these situations, where you many be living out of the car.
