What secret/special ingredient do you add to certain food/dishes?

One tablespoon of Marigold Vegetable Bouillon in soups and most things I cook to enhance the flavour.

My best secret ingredient however, is my HM plum chutney and apple chutney. Two dessert spoonfuls of plum chutney and a dash of soy sauce = best ever stir fry sauce; Apple chutney spread on pork before grilling or roasting = delicious.

I am similar to Thrift Lady with the booze on the go
I like a splash of vermouth in tomato-based dishes like bolognaise and veg stews.
I like to add anchovies to tomato-based pasta sauces too. Cooked to a mush with the garlic and barely detectable - just add a gorgeous depth. Esp to a beef mince bolognese (with a slug of vermouth in too)
I've also always added mustard powder to cheese scones and sauces, along with white pepper for oomph.Love and compassion to all x0 -
Nutmeg in tomato sauce for pasta.
Grated lemon peel in custard.
Chopped fresh parsley in veg soups and mash potatoes.
A splash of whisky in marmalade mix (while making it) and a splash inside the cook!Finally I'm an OAP and can travel free (in London at least!).0 -
I put Cayenne pepper in anything that is red or brown
we're pepper addicts in our house!
mixed spice on roast butternut squash and or sweet potatoes
I always massage garlic, salt, peper and oil on a chicken before roasting
Red pesto (the sun dried tom one not red pepper one) tastes fab with lots of things I pan fry chicken and at the last minute chuck a spoonful in with some cream or greek yogurt it makes a scrummy sauce. OH likes to add a spoonful to an omelette too0 -
I add ground coriander to all meat dishes - i think it makes them much more tastier0

BBQ sauce, smoked paprika and wine (red or white)
Vanilla sugar/powder or cinnamon to sweet things
Oregano and garlic to pizza

For a stew, add a teaspoon of horseradish, big dollop of tomato puree and couple of teaspoons of onion granules to a boring granules-made gravy, and after a long slow-cook, you have the yummiest gravy every0

I use semolina with a bit of paprika , instead of flour , to coat chicken breast before frying. It makes them crispy .0

Garlic in anything and everything savoury but I don't think it is a secret - we must stink!!:eek:Cheap and cheerful. Preferably free. :T LBM - more a gradual rude awakening.
