hi - my dd loves noodles (especially the ones from the chinese) does anyone have a recipe for making them like this at home? and also for chicken noodles?

nope - you know if you just ask for a portion of noodles (side dishes) they sometime come with some onion and beansprouts, as for the chicken ones she likes the supernoodle type ones but their prob full of crap so wanted to make a home made version with some dried noodle and some type of juice?BR as of 14/1/2009

ok i get ya....there are 2 types of noodles i like....straight to wok/dry egg which you boil first.....i think the dry ones are more like what you are after...i would fry onion add beansprouts (cook noodles in pan) and to the fryin pan with bit of oil and stir through - using the toasted sesame oil gives the noodles a nice flavour i think similar to waht you are used to having from the chineese takeaway....as for home made super noodles i think you coul make noodles and maybe add seasoning like chicken stock cube crumbled up (havent done this so just an idea:p)0

As niptuck has said really - buy a pack of the dried egg noodles (any supermarket). I use the fine ones as they stir fry better (thinner noodles), but the medium ones are what the Chinese use (they taste the same though!).
Cook the noodles according to packet, usually in boiling water for about 4 mins. Once cooked, drain them, rinse them with cold water & leave aside in the sieve.
You will need a wok, but a large frying pan would do. Heat sunflower or veg oil (leave the sesame oil till last, it doesn't react so well to being very hot).
Fry chopped onion till soft, add a clove of chopped garlic and some fresh grated ginger. You can then add any veg/ meat you like (obviously meat you would fry before veg). Make sure whatever you cook is chopped finely, keep the heat high and keep stirring everything.
Once all your ingredients are cooked, add in the noodles (you may need a dash more oil) and stir round till they heat up again. Add a splash of soy sauce to your taste, it will sizzle & evaporate.
When the soy sauce has evaporated, add a small amount of sesame oil, stir in & serve.
The cooking method is the same whatever ingredients you use. Chicken noodles are lovely if you also stir in some coriander & spring onion at the end of cooking.
The trick to stir frying is finely chopped ingredients cooked quickly over a high heat. The veg retains it's 'crunch' & flavour, you have to keep stirring so nothing burns, too low a heat & the veg seems to go a bit soggy.
For supernoodle type dish, you can get instant noodles from Asda for about 9p a pack! Reading the ingredients the sachet of flavour/stock they use doesn't seem to have as many chemicals or nasties in as other brands. I make these into a meal by cooking as per instructions but again I stick finely chopped veg and sometimes cooked meat in the pan to boil up with noodles. If your DD wants a stronger taste you could add a dash of soy sauce, and stirring in just a few drops of sesame oil once the noodles are cooked gives a lovely flavour.
(Exactly the same method applies to stir fried rice dishes BTW - cook rice, rinse with cold water & leave aside, then cook veg/meat/ingredients before adding the rice, then soy etc).Proud to be a moneysaver0 -
