    8oz/200g plain flour
8oz/200g medium oatmeal (not rolled oats)
    I teaspoon salt
    1 teaspoon bicarbonate of soda
    2 teaspoons cream of tartar
    2oz/50g marg or butter
    4 oz strong cheese, grated
    milk to mix
    oatmeal or flour for rolling/shaping

mix flour, oatmeal, salt, bicarb & C of T
    rub in marg/butter
    stir in cheese
add enough milk to make a dough as soft as you can handle without it being sticky
knead lightly* on a floured/oatmealed surface
roll gently or pat out & shape as you please,* but not less than 1/2" thick
put on a greased or floured baking tray & bake at 200C for 10-20 minutes depending on the size you've made them

I prefer them made with wholemeal flour, but it does give a heavier result which is not to everyone's taste

*the less you handle the dough the better the scones will be
  • I really like scones, with lots of butter on them. I've tried to make scones in the past but they didn't turn out good at all - more like Army biscuits.... hard and unbreakable...lol. I will try again using one of the above recipes. :D

The real trick is NOT to turn the cutter when you cut them out of the pastry because it seals the edges and so the scone cannot rise.

Cut straight down and then lift.

This info was straight from one of the tv chefs and gave me my most risen scones ever. :)

Mmm, savoury scones sound lovely. Do you have them as a snack or as part of a meal, if so what else would you serve?

We make the mix and then add in cocktail sausages to each scone make "pigs in blankets" - wonderful snack food
