Idiot Proof Pudding

    1,000 Posts Combo Breaker I've been Money Tipped!

    Chocolate Fudge Pudding Cake
    Grease a shallow baking dish - about 9'' by 13'' or for thicker pudding,
    use a 9" square one.

    Sift together
    1 cup plain flour
    2 tsp baking powder
    1 tsp salt
    2/3 cup sugar
    2 tbsp cocoa
    add
    ½ cup milk
    2 tbsp melted butter or margarine
    1 tsp vanilla extract(optional)

    Mix until just smooth,then spoon into the baking dish. It will be thick.

    Mix together
    4 tbsp cocoa
    1 cup soft brown sugar(light or dark)

    Sprinkle over batter in dish. DO NOT STIR
    Pour over all 1 ½ cups of just-boiled water - DO NOT STIR

    Bake for 40 mins at 180c
    Serve warm with cream if desired.
    When it's cooked there will be a thick fudgy sauce a the bottom of the pudding and a cakey bit on top.
    It's nice with some instant coffee(about a dessert spoon) added to the cocoa and sugar bit for a more adult taste.

    I don't want to be picky Peyton :) , but you could have just linked to my post. I know it isn't my original recipe, but those are my original words;) It is an easy recipe though, my 11 yo son made it for us at the weekend.

    I've never looked at the label re colourings, but what about fruit jelly?

    Not the ready-made pots, that's cheating!!
    The gelatine sheets/leaves are really easy to use. You can make a lovely soft, wobbly orange jelly just using them and some orange juice.

    I know you don't have money to buy extra foods but for the future;
    How about meringue nests topped with fruit, or meringues with angel delight and sprinkles.

    Another simple but yummy one would be jelly and custard, dead basic and cheap but lovely and tasty, plus you can get sugarfree jelly if you don't want extra sugar.

    I have a recipe for whipped shortbread which keeps for a few days and is really easy to make and dead yummy, they could also go in packed lunches. I will post in a mo when I locate it somewhere in my e-mails.

    Whipped Shortbread

    p
    225g/ 8oz softened butter
    75g/ 3oz icing sugar
    175g/ 6oz plain flour

    preheat to 180/ 350/ Gas mark 4
    cream butter and icing sugar until fluffy, gradually add flour beating for further 2-3 mins until smooth and light.

    roll into balls and lace on baking sheet for 6-8 mins until bottoms are lightly browned

    Microwave sponge pudding is so simple...

    1 egg
    2oz S/R flour
    2oz soft butter
    pinch salt.

    Beat egg and butter tog, fold in flour and salt, put lemon curd/jam in the bottom of a microwave bowl, then spoon in sponge mix, zap in the M/W for 3 mins, serve with custard . I vary this pudding by making it with different flavours, syrup, chocolate, apples in fact anything you fancy. It take 5 mins and is foolproof... makes enough for 3 kiddies or 2 adults

    Instant whip, every time!

    My version is a packet of silken tofu (Blue Dragon is 60p a pack in the oriental foods aisle) whizzed up in the blender with some sugarfree Crusha - tastes the same but with no sugar and lots of protein :wink:

    Alternatively, how do they feel about yoghurt? My friends' kids (and me when I was young) would get to choose a flavour of fruit yoghurt, or as a special treat mix some honey into a thick plain yoghurt.

    Sadly i didn't do so well in the early days, my kids where pretty much bought up on crap, for years we were a pizza and takeaway familyIt's only in the last 12 months that i've tried to bring my family's eating habit's into healthier lines.

    I'm doing well mostly all "main meals" are now healthy but i still struggle with Veg and Fruit. Till 12 months ago my kids thought veg was baked beans ... ugh i know i know. Im struggling to change bad habits for which i am compleatly and totally to blame.

    Right now i can bribe them to eat most veg though they still won't eat it willingly most of the time. which is when the "sweets after meals" thing came in... it was a ploy to get them to eat veg and it worked.

    The only fruit either will eat right now is banana and although i do hope to change that if i told them yesterday i was replacing sweets with fruit there would have been murder. Not to mention the fact that im Veg bribery tool would be gone... eat you veg and ill give you an apple, will only result in no veg and no apple being eaten, so i need puddings to be appealing.

    We have a "fruit bowl" which both kids are repeatedly told they can help themselves too, however in 6 months i've never known either kid to actually take something. Last time i tried to do the fruit thing... i made a fruit salad and put it into a suger free jelly, both kids spend over an hour picking out the fruit .. ugh!!

    They will eat yogurts with fruit in them, but they both see yogurt as a breakfast thing, and although i have sugested yogurt may become one of the pudding options i don't think they'd be amused if it was all the time.

    right now my "long term plan" is to get rid of the sweets by replacing it with "less bad puddings" and introduce more puddings with fruit into thier diet, however short term i don't want them to feel that by being very good and agreeing to scrap the sweets they are somehow missing out on something, i really want them to be enthusiastic about this pudding idea, because it's easier to get enthusastic kids to try new things.

    I've told them im going to try and make tons of different things for pudding so it will be exicting i'm just hoping to broaden thier tastes.. i figure if i start with appealing puddings, and some puddings with fruit, i can gradually make them healthier, and introduce things like "fruit salad" and just peices of fruit but right now the leap to straight fruit isn't gonig to work.

    Right now ill just be happy if i can move them away from the sweets, and get "SOME" fruit into them.

    This is a dead easy recipe from Delia, it makes a great cake and can be cut up into small pieces with whatever sprinkles you have in the cupboard. Used this for birthday cakes too.

    Someone posted this recipe the other day which my ED took to school today and they will have after school and its dead easy to make and loads of fruit. Theres loads of sugar so you could experiement and cut back on that but its scrummy!

    Soak 8oz raisins and 8ox sultanas (you could use currants but I don't like them) in 1/4 pt hot tea over night with 6oz brown sugar.
    Next day mix in 1 egg and 8oz SR flour. Cook in a loaf tin for 1-1 1/4 hours at about 150 c.

    This recipe was also posted here and make LOADS of muffins (fairy cakes) I usually get about 28 out of it and freeze then and then defrost for tea. Can add whatever you want into it

    Muffins
    2.5 cups sr flour
    1.25 cups milk
    1 cup sugar
    1 cup 'ingredient' (eg fruit/choc chips)
    1 egg
    90g butter

    Sieve flour into largish bowl and rub in butter. Add sugar and 'ingredient'. Add milk and lightly beaten egg and stir loosely. 200 degrees for 20 mins for medium muffins.

    Apologies to the OP of these recipes I never record who posted them first but I snaffle LOADS of recipes from here!!:o

    That's alright luv;) I wasn't offended, in fact I thought that's what must have happened -goodness I sound really petty don't I :o ? The original recipe is something of an American classic I believe. I just love baking American-style with cup measures, so easy;)
