£40k to invest/save help!

Some advice please. Me and OH are in the lucky position of having £40k in the bank, we originally had over £150k which we kept it in a fixed term deposit account that was easily accessible as we were finishing off our new house. So we're now left with £40k and the interest rates have obviously plummeted. Both our ISAs are full for the year. We would like to keep maybe £10k easily accessible but the remaining £30k we have no intention of needing/touching for at least 2 years.
We have no other debts bar our mortgage, in which we have a fantastic deal at the minute, and we tend to save a lot throughout the year to help pay off chunks of this, so we dont really want to put the £30k to the mortgage.
We also have a baby son - is there anything we could or should do in his name to make the most of this money?
Any ideas anyone?
