NS&I Bonds question

I've been reviewing our savings and need to move some money from poor paying accounts. The rates on the NS&I growth and income 1 year bonds look favourable, but I don't understand how bond accounts work.
Any views on these accounts would be appreciated.

With the ever changing rates, dealing with NS&I Growth bonds was a godsend. Not the very best rates, but with the need to fix was instant.4.2% one year. Compared to sending off for an application form . Still waiting for the AA bond guff at 4.55%.0
