Is anyone else having difficulty in buying packet suet at the moment? i've tried three branches of Tesco and two Co-ops and they've all been out of stock. One of the Teso did have the "light" suet but I just want the old fashioned beef suet.
Dd2 is leaving home next week and I want to make her favourite lemon pond pudding before she goes.

More properly known as Sussex Pond Pudding a traditional English pudding believed to originate from the South East county of Sussex. Made of a suet pastry which encases a whole lemon, with butter and sugar, it is boiled or steamed for several hours.
It is incredbly delish (not low fat though) and I make it in the slow cooker because I haven't go tot grips with steaming properly. the only thing to remember is to use an unwaxed lemon

I make the in the slow cooker too -saves having to keep topping up the water.
