Buildings Insurance

We have had a burst pipe in our unoccupied property, and most of the house has suffered extensive water damage. We are covered for this by our insurance. We have had the loss adjuster round, and today we had the company round, that the loss adjuster has instructed to dry out the property. Not exactly sure of what happens next, but think we will have to provide quotes for the damage. What I really want to know is will we be offered the cash, or will the insurance comany pay the company we use to repair all the damage directly?
