I thought this was a well known fact!

I was "taught" this at school in my general studies lesson back in 1998- preparing for University- the reasons are because grated cheese is often the good bits of cheese that cannot be sold on as parts of it are damaged/bad, the rest of the cheese is fine, but you can't really sell bits of cheese chunks to customers- better to grate it.
It also has fillers like starch and anti cake stuff, it bulks up the cheese, makes it appear more then it is, as a result, cheese tastes milder, you use more of it, you buy more of it. (Teacher suggested we use paramasan cheese for taste)
It is also very easy to make- requires little or no help from people as they have massive machines to grate stuff so the stores don't lose much if anything to have grated cheese apparently.
  • There was a documentary on BBC3 a few months ago about what goes into fast food. One of the things they looked at was value cheese from cash and carrys.. it really was completely vile!!!!!

Surely the anticake stuff is to stop it sticking together, if you grate cheese and put it in a bag it just sticks together
