This is more of a hint-when cutting up the veg do it as small as possible so less mashing afterwards. Hence a little smoother.0 -

Red Soup (that's what my OH calls this)
In butter or oil gently cook some finely chopped onion, celery, leek, carrot, red pepper and garlic. You don't need all these but don't leave out the onion.
Next add any spices you like -smoked paprika is good and particularly red, or chilli.
Add some larger chopped veg -carrots, potato, squash, sweet potato, sweetcorn, swede, more red peppers
Add some cooked beans -kidney, chickpeas, cannellini
Next add about 1 pint of veg stock (powder or cube or hm) and a carton of passata/tin of tomatoes.
Simmer until the veg are soft.
you can also add small pasta to this soup. We like it with grated cheese.0 -
All the replies are great here. Personally I like most of our veg soups with chunky veg in them. It gives them a bit of the chewing sensation, if that makes sense. :rotfl:I also like to make it in the slow cooker for about 6 to 8 hours on low after it comes to the boil. The veg seem to get softer that way and are easier to mash. I do use less stock when in the slow cooker as it doesn't evaporate like cooking it on the hob.
