Thickness of new underlay

We are replacing the carpet in our lounge and hallway and although the existing underlay looks in good condition, we are thinking of replacing it anyway for our peace of mind!!
My question is... what thickness should i be looking to buy? Is it all down to personal choice, or is there a min/max that is good for the job. I have been browsing some websites and they seem to range from 3mm to 11mm.
Instinct tells me to go for the thickest i can afford in order to get that ''luxurious'' feeling, but does having it this thick have any drawbacks?
Also, does having a thick underlay offer any better sound / heat insulation?
any recommendations?

If you are buying your own, I would recommend taking a look at :https://www.tradepriced.co.uk Their prices are fantastic.
Personally I would recomment Tredaire PU Underlay. It's a fantastic product.
The thinker the Tredaire, the higher comfort, noise an heat insulation you will receive!
Also, it won't squash and stay squashed like rubber waffle underlay. It will always feel brand new and spring back if you put anything on top of it (from my experience anyway).

We use a local, independent carpet shop who employ their own fitters.
When they came recently to fit our hall/stairs/landing carpet they were laying Cloud 9 underlay. I'd read about this being one of the best and asked what thickness it was. They were using 9mm. I asked what were their thoughts on the 11mm one. I was told that people often ask for 11mm because they think thicker is better. Whereas, in fact, with the 11mm it is often too thick for the carpet to be held properly by the gripper.
They suggested for domestic installations Cloud 9, 9mm, is the one to go for.
Have to say that used with a good quality 80/20 wool/man made carpet this feels lovely underfoot and our carpet is showing no signs of wear after 3 years despite it being on stairs.0
