Offshore banking

My girlfriend and I are both about to start working in Dubai (in about a month).
We'll be earning tax-free salaries but don't really have a clue about where to find reliable advice on offshore bank accounts.
Is there anyone out there who can advise us on, for example, how to work a current account and a savings account?
Which banks have the best accounts and reputations?
Are there any good websites?
How can you access the money in an offshore account when we are back in the UK without Mr Taxman getting hungry?
Is there, for example, the equivalent of an Offshore Money Saving Expert?
All advice very gratefully received.
