Stuck on meals

  • how about an all day breakfast, could have any of the following eggs, bacon, sausages, potato scone, hash browns, beans, muchrooms, chips, fried bread, french toast.

  • omelette. i love a mushroom omelette cheap and easy. you can add fillings such as bacon/ham/cheese/onion/tomato.

  • Veg Curry is great made with frozen veg and red lentils served with rice. I lived on that for ages as a student and now I am making it again. Lentils are great as they are cheap and very good for you. I just boil the lentils in water, cook some mixed veg, add the two together with a chopped onion and curry powder. You can make it go further by adding a can of chopped toms and it is a dish that freezes well too.

    I eat alot of pasta, rice and spuds and it can get boring but I try to vary the meals as much as pos. When I have beef mince sometimes I make a Shepard's Pie but topped with mashed swede to make it abit different. Another cheap meal I have made is a Corned Beef Stew which is just some veg cooked in a can of toms with herbs and some Worcester sauce added to it. I then add in near the end of cooking that through chopped chunks of lean corned beef from a small can. One of my mates thought it would be disgusting but she really liked it when she tasted some I'd made.

    Here is my menu for 2 weeks
    Saturday Burger & Chips
    Sunday Roast Chicken
    Monday Steak & Kidney Pie
    Tuesday Carbonara
    Wenesday Pork Chops & Stuffing
    Thursday Chicken Ham & Mushroom Pie
    Friday Special Fried rice
    Saturday Gammon Egg & Chips
    Sunday Roast Beef
    Monday Sausage & Mash
    Tuesday Chicken Portions & Chips
    Wednesday Beef Casserole & Dumplings
    Thursday Spagetti Bolognese & Garlic Bread
    Friday Chicken soup & Home made Bread
    Saturday Fish Pie

    Everything is home made, from scratch, I don't have a slow cooker yet, but should have one by next week.
    The mind is like a parachute, it works best when open
  • here is my menu for the next 2 weeks

    Sun - roast beef (cooked in SC last night) HM yorkies, potatoes and veg
    Mon - leftover beef and baked potato
    Tues - chicken fajitas
    Wed - chilli and rice (in freezer from batch cooking)
    thurs - Stew/Sausages (made in SC last night) pots and veg
    Frid - Marsetti (mince, Campbels chick and tom soup,cheese and pasta)
    Sat - pizza (bought from ASDA reduced - in freezer ATM)
    Sun - roast chicken, HM yorkies, pots and veg
    Mon - beef stroganoff and rice (will be HM need to dig out recipe)
    Tues - Fish and oven chips (in freezer)
    Wed - coq au vin with baked pot (in freezer - am making today)
    Thur - bacon, Campbells tom soup, onion and mushfroom with macaroni)
    Fri - Chicken curry (in freezer - batch cooked yesterday) with rice
    Sat - Marsetti - as above
    Sun - Steak Pie - filling already made in SC last night, pots and veg

    I do a meal planner based on cupboard and freezer contents then plan shopping list

    We have a veggie/vegan household and tend to rotate the following meal-types:



    Beany-veggie bakes/casseroles ( may put dumplings on top)

    Jacket spuds with various fillings

    Pasta/lasagne/spaghetti type meals

    nut/bean roasts/haggis-types

    Veggie/beany layered thingys ( e.g shepherds pie, potato layers etc)

    stir-fries

    Rissotto-ish type

    burgers/rissoles

    roasted veggies

    veggie/beany crumbles/croustades

    pies/pastries filled with various ( e.g left-over casserole)

    Pizza

    Curry

    soup

    Hi Jolaaled,

    We have very similar menus to you, as my son is veggie, and we tend to follow suit.
  • Thank you everyone. I'll try and do a menu planner again I did do one but that was having things like tortillas but as I said I haven't had much luck with this flour. I will keep trying though and if all else fails I'll buy some noodles as long as I can eat them.
