Idiots guide to meta-tags?

I wonder if anyone can help? I recently set up my husbands website for his business but we're having problems with the meta tags - I have no idea how they work or how to apply them to our site. We're with 123reg and have paid extra to have our ratings boosted but I don't know what I'm doing! Could some kindly soul please take pity on this dunce and point me in the right direction please

It is very important to use META Tags as well as a good TITLE if you expect to be found in most search engines.
