My computer has been in the shop to be rebuilt over the last couple of days and various settings are now changed.
So ... how do I set the e-mail to default to Outlook 2003 instead of my normal ISP?

If you mean on the windows start menu, then right click Start, select Properties, click Customise then under Email select Microsoft Outlook.
When you run outlook it will probably tell you it isn't the default reader so click the appropriate button to make it default.0 -
or start > settings > control panel > internet options > programs > set email to Microsoft Outlook.
you'll need to configure your mail account on Outlook though.0 -

Just to Clarify...
An ISP is the Internet Service Provider, they supply you with the connection and and email account, so if you have a Dial Up or Broad Band Account with Blueyonder for example you may have an email adress of XXXXXX@blueyonder.co.uk
Or you Can just have the Connection with Blueyonder and have a Gmail account.
These E-mail accounts can be used with Outlook Express or Outlook.
So what is it that you need/want.0 -
outlook > tools > email accounts > add > pop3 > then you need to put in your details. email address, username and password, server addresses. The server addresses are usually pop.'isp name'.co.uk / com / net and smtp.'isp name'.co.uk / com / net
Or if they set it up on express or anything else it might ask if you want to import details0 -
Scheming Gypsy - Yup, I think I have already sorted what you are suggesting. I find all of this so confusing, and had thought that everything would be restored to normal after the rebuild ... should have known better!
Anyway, I guess it is just a case of trying to get things back to normal.
