    Quick gel for me too. I tried using gelatin once and got in a right mess with it. The only advice I have is, that if it is a large flan case you will need the 2 sachets to cover it all.

    Is the filling in a sponge flan base jelly or some kind of gelatin as i bought a sponge base but i was thinking that jelly would probably soak right through it?

    i know my mum has melted down some jam (normally apricot) and then brushed the inside of the flan with it to seal and i also remember seeing someone on here suggesting using the pack the flan came in to make the jelly and then transfer it over. :) hth

    I use quick gel, or sometimes arrowroot with fruitjuice.
