    Mushroom sauce - my made up recipe. (I'm veggie so don't know how this would go with steak!)

    1 tbsp Olive Oil
    1 oz butter
    I medium onion chopped
    4oz button mushrooms (chestnut mushrooms have stronger flavour) sliced
    1 tsp brown mustard
    1 tsp tomato puree
    1 tsp yeast extract
    1 tsp dried thyme
    1 tbsp cornflour or plain flour
    Half a pint of water
    2 tbsp double cream

    1. Heat the Oil and Butter in a medium sized pan. Add the onion and mushrooms and fry until soft.
    2. Add the flour and stir until you have a thick paste. Add the water a little at a time and stir continuously until you have a smooth paste.
    3. Add the mustard, yeast extract and tomato puree and stir until dissolved. Stir in the thyme.
    4. Simmer the sauce over a low hear for 1 to 2 minutes. Tast and season if necessary.
    5. Stir in the cream and warm through but do not allow to boil.

  • Tub creme fraiche or cream - or mixture of both
    Splash brandy (optional)
    Lots of freshly ground black pepper

    After cooking steaks in pan, remove and keep warm.
    Deglaze pan with brandy until bubbling
    Add creme fraiche/cream
    Add lots of freshly ground black pepper (to taste)
    Simmer a little to reduce

    Sliming friendly alternative to any white sauce base :

    Cook (tinned or frozen) sweetcorn & puree in blender adding the cooking water by the spoonful until it reaches the desired consistancy. Use as a white sauce base and add cheese/peppercorns/mushrooms/whitewine etc as desired.
