i don't have a recipe to hand, but bara brith is fatless. i remember my mum making it when i was younger and recall it involved soaking fruit overnight so it made a kind of tea bread cake. very yummy!
  • Has anyone used apple puree instead of fat when making a cake? Does anyone have a tried and tested recipe at all?

I've made brownies using apple puree - it does work but you can definitely taste the difference.

my live in master baker tells me you can
make a fat free cake not the easiest
    thing to make,

(Our kids eyes are glazing over here)

Make sure that everything you use is completely
    grease free,bowl,utensils,your hands everything

He cannot find his recipe for this as its ages
since he last made one,but reckons if you
look for a whipped cake recipe

whip up your eggs and suger together, get as much air
as possible, almost to a merange quality, then gently
a little at a time fold in the flour, trying not to knock
out the air in your mix.

then bake all of thiswould have been really fab if
we had a full recipe for you,but if you can get the
gist of this from above it might be a help
