(And to whoever origionally posted it we had it for Christmas and it was lovely)

Glad you enjoyed it aquilaM! We soak the fruit in an orange liqueur which is really delish. We have since been told that it is not strictly fat free as apparently there is some fat content from the ground almonds, probably not too much but I apologize - I should have mentioned this in the original recipe.Our days are happier when we give people a bit of our heart rather than a piece of our mind.

We took your advice, and after a couple of goes actually spoke to the woman who cooks the cake at the Garden Centre. She was good enough to write out her recipe, but it was a pack of this, a pack of that, 24 eggs, and makes 12 cakes. She did gives us a list of all the ingredients though.
My wife made some educated guesses, and reduced the recipe to a single cake as follows:-
Fatless Fruit Cake
==================
400g Walnuts
400g Hazelnuts
400g Brazil nuts
400g Dried Apricots
250g Dates
200g Glace Cherries
500g Mixed Fruit
100g Dessicated coconut
Roughly chop the nuts and soak overnight with the rest of the above in
3/4 pint orange juice and three tablespoons of Brandy (could always
reverse these?)
In a bowl, whisk together:-
9oz sugar
6oz SR flour +1 tsp baking powder
6 medium eggs, then stir in the soaked fruit and nuts
Put into lined 2lb loaf tin
Cooking guideline - 1 hr 15mins at 160deg C
(NB the cake WILL be solid, and maybe well done on top, but
is delicious - in my opinion, anyway)

My wife has made a couple of these now, and they are lovely. Go down well with mid morning tea at work. NB, definitely not low calorie!

Hi Guys...Not really moneysaving, but I guess Old Style (ish)
Does anyone know a recipe for fat free cake? I wanted to make one for my health food loving mum. I have brought something like this from a farmer's market years back, and from memory it used orange juice, water, fruit and flour or something to that effect.
Does anyone know how to make one??? Or had a go at making one?

how about making up a cake mix with lots of extra fruit and just leave the fat out and see how it cooks?
based on bero easy fruit recipe (below)I'd try substiting ground almonds for half of the flour for nice crumbly texture, ( and omitting the rest!)
the natural fat in the almonds will provide some fat for the cake.
if you soak the fruit before cooking it will help make the cake moist.

I make this cake - I tend to add other stuff like dried apricots and ground mixed spice for a bit of extra flavour. I bake it at 160 degrees and it takes about 35-40 minutes. I know the recipe above says an hour and a half but don't leave it that long before checking it0 -

Can I be pedantic and question the "fat free" ness of this cake? Although it's obviously not made with fats (butter, oil etc) there must be a fair amount of natural fat in all those nuts.

Would have to agree with daysieblue,I am on a low fat diet becuase of high tryglyseride (sp) problems and the only nuts I can eat freely are chestnuts, the only nuts I dont like!! coconut is a big no no.
Having said that, I bet the cake is delish, enjoy it, all of you that give it a try.Away with the fairies.... Back soon0
