Lamb bones/stock

  • My DD asked me if she could use the left over bone from her big leg of lamb for anything (apart from the dog as he gets an upset tummy if he eats bones) I know with a chicken carcass I render down for stock but I honestly haven't thought about the bone .She did have a rather big leg this week (end of the month and she got paid ) and I had stripped as much of the meat of as I could as she wanted to make a lamb curry last night.Do any of you make lamb stock with the left over leg bone or broth or anything ? I said I would ask on here as i'm sure someone will come up with a recipe

    Hi Jackie,

    Lamb bones make a lovely meaty stock, just simmer them as you would a chicken carcass then add pulses/veg/any leftover meat to make a tasty broth. This thread has more advice that should help:

    Absolutely you can use it for stock. What do you think "soup bones" from the butcher are?

    I remember them from years ago but today you'd be very lucky to find a butcher around my area that would let you buy some Thinking about it my late Mum used to get 'bones for the dog' but by the time the dog got them there was very little meat left on them :):) She was a very frugal feisty little Glaswegian who used to put the fear of God into our butcher with her steely-eyed look I think .He was always very respectful of her and she would come out of the shop ( a real butchers with sawdust on the floor) with just the hint of a smile on her face .back in the late 1940s early 50s there was still rationing on .In those days if you were a regular customer (and most folk were as there were no supermarkets ) he would sometimes chuck a few sausages in with the meat or some kidneys or a tiny bit of liver my mum could do amazing things with very little meat . Shame we can no lnger buy those pork chops with a bit of kidney in them my late OH used to love those .

    You'll get some lovely stock from that! I would stick it in the slowcooker with an onion and carrots..then use it in a casserole or make gravy, or just make some delicious soup.

    Jackie my mum always got free bones for "the dog" from our butcher but she would get a whole meal from the meat before the dog got her bone.

    OMG - me too! My absolutely favourite way of having kidneys. And the pork chop tasted even better than usual too.

    I've just done a lamb's leg in the slow cooker (reduced obviously :)) for the first time & very nice it was too.

    However I'm left with a whole pint of the stock which I'm really surprised at as I thought lamb was really fatty? I've taken off the fat but don't know what to do with the stock now, any ideas ?

    Freeze it. In a plastic take-away tub, or in an ice cube tray.
    The acquisition of wealth is no longer the driving force in my life. :)

    I don't really want to add it to soup, which is what I would normally do with stock, as it's so hot for soup at the moment, any other ideas?
