    a pack of filo pastry goes a heck of a long way! you could try making mini samosas, or little purses (just a round of pastry with filling plonked in the middle then the sides drawn up and pinched together until they look like an old fashioned purse or 'dorothy bag'. fillings could be blue cheese and a bit of cherry tomato, salmon and a little mild onion or cream cheese, some tinned chicken supreme (mash the chicken and sauce together well and you will be amazed how much you can get out of just one tin - add some cooked mushrooms and you can stretch it even further).
    or you could make mini chinese spring rolls from them (have a look at the filling in the 'greenland spring rolls' for ideas. but you cant go wrong with bean sprouts, prawns or shredded chicken or pork (cooked) - or leave out the prawns and meat for a vegetarian version, some spring onion finely sliced, some grated carrot, finely sliced red or green pepper and a little hoisin sauce or five spice powder mixed in for flavour.

    oops - forgot to say that you can either deep fry the above or if baking then put in hot oven but dont forget to brush them with a little oil first!

    do let us know what you plan to serve! and dont forget that with canapes they should be eaten in ONE bite! so the smaller the better! good luck hun!

    I am not sure if I should say this or not - but what the heck! the poster is asking about 'canapes'............traditionally they are little tidbits served while the guests are getting together and having the first drink of the night! canapes are ALWAYS one bite big as the guests dont have plates and have a drink in one hand - they are supposed to take the canape and eat it without having to hold the canape and take another bite (they shouldnt need to go wash their hands either, so anything sticky should be on a cocktail stick).

    I know this got merged with an earlier thread about buffets - but buffets and canapes are TWO DIFFERENT THINGS!
