Vegetable chili recipe: looking for the best ever!

Hi folks
Please feel free to move this to the slow cooker thread. Its grown so big that I wasnt sure where to put it!
Basically, my son is a veggie, but my hubby complains when I dont make a 'meat' dinner so I want a good hearty vegetable chilli that I can bulk up with rice and make a good meal out of.
I've just bought a slow cooker so a recipe to go in there would be good :-)

I made a lovely red bean chilli recently and I got the recipe from https://www.beyondbakedbeans.com. It was very simple and quick to make and was very filling.0

The nearest I could get was the chilli bean recipe from our main Old Style Recipe Collection which could be done in a slow cooker, and you could always lightly fry hubbie's mince or diced meat and just stir it into his portion just before serving...

I haven't tried it myself, but I have a friend who used veggie mince with my chilli recipe & says it turned out well, so that might be worth a try
I've made the meat version in my slow cooker & it works well, just increase the ingredients to suit the capacity of your SC

I make veggie chilli a lot (although not in a slow cooker, must admit I have never thought of using it for that!). I basically use lots of veg, i.e. onion, carrots, red and orange peppers, courgettes, cauliflower, green beans, mushrooms and then add kidney beans some tomato puree, small amount of coriander and cumin and chilli. Everyone I have ever cooked this for has loved it (even my friends who love meat) and I lot of said it is better than chilli made with meatThe world is over 4 billion years old and yet you somehow managed to exist at the same time as David Bowie0

Yes thats why I decided to make one. I went to a friends buffet at Christmas and decided to try a little bit of the veggie option which was the chili. It was lovely and I imagine very satisfying (only had a teeny bit as it was a buffet) She used different veg and I didnt miss the meat at all!0
