I check my add/remove programmes list fairly often and there's a growing collection of 'Windows 98 blah blah updates'. Do I leave these in the list or is it ok to remove them? Does removing it out of the lidt actually remove the update?

Leave them. Why would you want to remove official Microsoft Updates?
In XP you can hide them in the list by unchecking "Show Updates" at the top of the Add/Remove Programs pane.
For 98 I believe it's a registry tweak.
