making bolognaise sauce from scratch

    Like most of us on here, my recipe really depends on what I have in.

    In summer when I have tomatoes in the garden, I will make up batches of tomato sauce from fresh tomatoes. I sometimes find the colour isn't as good, so I add a dash of puree to colour the mix up a bit.

    Otherwise, I use either tinned tomatoes or passata. Lidl's do a great passata that I have found adds real richness to the sauce. I have been very impressed with it.

    I also add some red wine in mine and use fresh oregano if I have it - although also use dried if not. I also add a bay leaf.

    I have added any or all of the following at some time or another to pad out my sauce:
    - courgettes
    - mushrooms
    - leeks
    - red/green/yellow peppers

  • would you say it worked out cheaper to buy a jar of asdas own spag boll sauceat around 80p or make my own were i have to put veg in and tom puree plus tinned toms etc

    just thinkng about my shopping list for tomorrow??

    depends what you put in it but I use 1 onion (few pence), half a packet of mushrooms (30p) 2 tins of chopped toms (38p) dollop of tom puree (few more pence) so I came to the conclusions its probably not much cheaper but at least I know what I put in mine and its healthier.

    i'd def say make your own works out cheaper. and not only cheaper, but u know excatly what in it.

    i make 2 types.

    first is onion , mince beef , beef oxo , bit of flour , water , thyme , tom puree and garlic. costs pence to make.

    second is chopped/finely diced carrots, chopped/finely diced celery , tin of toms, beef stock , onions , scrap of nutmeg, mince beef, flour , water and again really cheap.

    both make gorgeous spag bol's, full of flavour and i know excatly what were eating.

    i use

    2 tbs puree
    1 tin value chopped toms
    a sprinkle of dried herbs
    1 clove of garlic
    1 large onion

    I think its the mushrooms that make mine expensive.
  • We have just had a lovely spaghetti bolognaise for tea:- I always make my own sauce.

    1 x red onion
    1 x clove garlic (optional)
    1 x tin tomatoes
    1 x carrott grated
    2 x vegetable stock cubes
    1/3 pint water
    3 tbsps tomato puree
    sprinkle of mixed herbs.

    I use Quorn mince too, we dont eat red meat.

    The sauce I make can be used to make a lasagne too or even adapted to make a Chilli con Carne, leave out the carrotts, add one x tin red kidney beans and 1tsp hot chilli powder and 1 tsp cumin.

    I used to make my own spaghetti bolognese sauce but now buy it in jars for the convenience, naughty naughty. :naughty:

    definitely need to get back on it! It was always cheaper and although it took longer the conscience was put at rest as I knew exactly what was in it, and I could play the saint all night at having toiled over a hot stove! :D

  • I'd far rather make my own than use a jar - then I know what's in it ;) I don't use a lot of meat in mine (500g minced beef makes about 16 portions) and I add whatever vegetables are in season, which keeps the costs down. I also add a big handful of red lentils, which makes it stretch even further.

  • you lot would definitely think mine is expensive!

    I use carrot, onion, garlic, courgette. aubergine, mushrooms, peppers canned tomatoes, passata, thyme , rosemary , oregano, then puree it as a veggie sauce. Once this is cooked I can use it with mince, chicken, or by itself, or even pork.

    Cookign and food shouldn't always eb about 'Cheapest' - you are what you eat, eat cheap, additive filled food, you wont' be healthy.
