Homemade chocolate - recipes

Hi there,
I've always made chocs and sweets at Christmas for my family and one of their festive favourites is my marzipan christmas puds. Make small balls of marzipan and dip in melted choc, when set melt some white choc and put some on top (to look like brandy sauce on top of a colouring book christmas pud) before that sets use tiny cut up bit of red glace cherry and candied anjelica to make "holly leaves and berries" on top. Pop into little cases and bingo, festive choc!
Another family fave is strips of candied peel dipped into dark choc.0 -
I made chocolate truffles last year and used made fillings using marzipan, rum soaked raisins, stem ginger, cocktail cherries, almonds, honeycomb all sorts of different things.
As these had a ganache base I made the ganache froze it for a few weeks then slowly defrosted in the fridge before finishing them off. Not sure about solid choc tho as freezing might make it turn white.
I got my bags from Lakeland not the cheapest admittedly but then I wasn't very OS then.

Hmm this all looks great, I think I've got some Ikea silicon ice cube trays knocking around somewhere. Might have to try some in the next few weeks...I'm guessing there is more of this kind of thing on the Special Occasions board? The threads are so huge over there it takes me ages to find anything, will have to go and brave it!Piglet
