saw a recipe last week in the magazine 'country kitchen' i think!!
make the choc shell and when its set, cut off half and fill it with a tiny ball of frozen vodka rose hip syrup. put the half back on and seal.
never made chocs but have to say that this inspired me. i suppose you could do all sorts of things with syrups and alcohol. yum.xx0 -

hello deb
I have to be honest, I don't actually make the chocolate. I use shop bought chocolate which I melt in the microwave and put into silcone chocolate moulds to set. I just vary the centres0 -
Mars Bar truffles......oh my....drool drool. Unfortunately don't have the recipe any more, but you melt Mars Bars with a bit of hard butter (ie not spreadable) and a small amount of double cream. Stir well, leave to set in the fridge, then roll into balls (trying very hard not to lick your yummy sticky paws) and dust with icing sugar/cocoa/drinking choc/crushed Flake/grated choc.... Not exactly low calorie but so delicious even if you're not a big fan of normal Mars Bars.
I've recently had to give up sugar (I don't understand the word 'moderation', sadly), so I'm just torturing myself on this thread and I'm slinking off now to eat an apple.0 -

What about some fruit and liqueur fillings? You could soak some raisins in rum and put them in, glace cherries in cherry brandy, chopped (or even whole) dried apricots in amaretto, glace pineapple in malibu, prunes in armagnac, that kind of thing. It needn't be expensive as you could get those weeny bottles of spirits and have lots of fun experimenting (with the chocolates, not with the spirits lol!).0

Dried Cranberries work very well with dark chocolate.0

anyone know where I can buy small bags for chocolates? I saw the website earlier, but the bags are from £1.50, and the p&p is £3.50. I work in London so should be able to pop into a chop easily.
Thanks. L0 -

Hi all
How long do the chocs last? I'm thinking of making some with a Baileys ganache filling as Christmas presents, but not sure how long they'll last. I guess Quality Street chocs last months and months in their wrappers (assuming I don't scoff the lot beforehand!) but wasn't sure if they use preservatives and other magic. Any info would be much appreciated! Thanks.
