Does it have to be strong flour/ BM flour in the BM????

    I always use BM flour, although i do try to use the shops own, which is cheaper than the hovis/allinsons varieties ad i havnt noticed a difference in quality or taste. I also use less sugar and salt in my recipes (trying to be healthy) and although the recipes say to be precice with the measurments, again i havnt noticed any difference.

    I always used to use strong flour until I read on here that I didn't have to - I tried it and the bread was fine! Now I usually mix the 2 types or just use whatever I have.

    96475, it makes delicious rolls and i haven't used any other recipesince trying this one, one word of warning the rolls don't hang around for long! As soon as these are out of the oven my kitchen seems to become a meeting place:confused:

    In it the recipe states 3 3/4 cups of all-purpose flour as they have never found the need to use bread flour, these rolls do rise well, as I've usually always had bread flour in the cupboard i have always used it but I'm going to give them a go with normal flour to try it and maybe claw back a few pence on the blown budget of december. I do however get my bread flour from lidls i find its the best one and only about 47p a bag.

    1 1/4 cups skim milk 1/3 cup vegetable oil or canola oil 1/4-1/3 cup sugar (I use a 1/4 cup measure) 1 teaspoon salt 3 3/4 cups all-purpose flour (I have never found the need to use bread flour these rise beautifully) 2 1/4 teaspoons bread machine yeast
    1. Place all ingredients in order recommended by your bread machine manufacturer.
    2. Select dough cycle and start machine.
    3. I preheat my oven to 100°F and turn off.
    4. When dough cycle is complete remove from machine and proceed.
    5. I roll into a long log and cut into 12 pieces for hot dog buns or 9 pieces for large hamburger buns.
    6. How big you want them is up to you.
    7. For Hot Dog Buns, I roll out till they look like long skinny wieners,.
    8. Hamburger Buns, I flatten with my palm till about the thickness of a pancake. They rise beautifully and look as nicely shaped as store bought ones.
    9. Put on parchment-lined baking sheet so sides are almost touching.
    10. You can brush with melted butter if you wish but I never bother.
    11. Cover with cloth and put in the warm oven for 45-60 minutes to rise.
    12. When doubled remove from oven.
    13. I bake mine on the top shelf in my oven.
    14. Turn oven to 400°F and when you put the buns in the oven, reduce temperature immediately to 375° and bake hot dog buns 15 minutes and hamburger buns 17 minutes.
    15. CINNAMON BUNS. Use 1/3 cup sugar in recipe. Made 10 large buns.
    16. Roll out to about 12 x 15" and spread with butter or margarine. Sprinkle cinnamon-sugar mixture over all and roll up tightly. Cut into as many buns as you want. I make 10.
    17. Set oven to 400° and turn down to 375° when you put buns inches Bake 20 minutes.

    Halloweensqueen, sorry to be a pest, but would the cup measures by as American ones, or the cup you get with your bread maker? If you could just say as near a possible how much in weight a cup is - I would love to try these!

  • To be honest I've always used the cups that came with my breadmaker the 240ml and I've never had bad results with them they are 240ml amercian cup size is 250ml, so i just fill the cup right up and its fine!
    You're not a pest at all, I've had so much help from this site I'm more than happy if i can give something back!

  • I think I've overdosed on choccys, as I've mentioned the 240ml twice and can't spell american eihter!
