    Hi kidkat - I'm sure I have read somewhere on these forums that you can pour your cooled soup into a plastic freezer bag (It would need to be fairly strong). The bag is already inside an empty tub, which could be an icecream tub. When the soup is frozen you can then just ease it out of the tub and store the block of soup quite easily. icon7.gif

    Take a pint glass. Line it with a freezer bag as if it were a bin liner. Then ladle 2-3 ladlefuls of (cooled) soup into the bag, get rid of excess air and tie a knot in the top.

    Then take an empty one-litre orange juice tetrapak or similar. Cut the top off and drop your freezer bag full of soup into the bottom. Fill more freezer bags using the pint-glass method, and stack them up until the juice carton is full. Place the carton in the freezer.

    When frozen, take the blocks of frozen soup out, separate them, and put back in the freezer. Re-use the carton :)

    If you're freezing liquids, put them in a bag inside a plastic container, that way they retain the squared shape when they freeze and you can take them out of the container once they're solid and stack them easily

    If you're freezing individual portions of soup, put the bag in a mug - that way the frozen soup is the right shape to go straigh into the microwave :)

    ETA: that'll teach me to hit 'refresh' before hitting 'reply' lol!

    freezing in a plastic bag brought past memories back. I used to do that with a bag in a container. I just had a flashback to that old cottage where I started doing that. Blimey, deja vu or long term memory as I`m over 60

    kidcat - I've given storing stock, soups and purees in plastic containers because when they're empty and temporarily out of use they use up every darned cupboard space in the kitchen (and when I try to get one out, they all come tumbling out!). I've completely converted to the zip lock soup and liquid storage bags sold by Lakeland (and probably some other suppliers as well). They are made of thick transparent plastic so you can see what's in them, they can be packed/ moulded into whatever storage space you have free in the freezer before they freeze solid and they can be washed time and time again in warm soapy water before being dried and stored flat until needed.

    Can I freeze passata in the same way as described for stocks and soups, I should imagine that it would be ok?

    Passata freezes fine! I usually do a big batch of tom sauce in the SC and then freeze it in portions.

    Re containers for soup, I use old marg tubs, I get other people to save them for me as well! Ideal for a one person serving.

    Nanny Ogg, love the idea about freezing in a mug, how clever is that! My kids will be so impressed if I do that lol!
