What else can |I use the buttermilk in? Can I just put it in any MW cake mixture? Still have about 1/4-1/2 pt left.
BTW: I just did mine in the FP using the metal blade thing. Just keep processing it until it turns into a big lump of butter.
chilled buttermilk makes a lovely refreshing drink, it's completely different from the thick cultured stuff you get in the shops, mine rarely lasts long enough to bake with

tonight I made my own butter, I have briefly perused the forums, but just felt the need to tell everyone. I have frozen the butter and buttermilk, and I expect I will use the butter in cake making or maybe even spreading on bread (depending on the taste). I am a little stuck for what to do with the buttermilk, I dont really want to make scones, or anything that will contribute to my chubbiness, so will leave in the freezer for the time being. I guess I dont want to have to make something just for the sake of it because I know I will have to eat it. My cream cost 10p for a 300ml pot and I got eight, I have filled all the pots with the butter and must have a good pint of buttermilk, so for 80p and about an hours work I feel very virtuous.0

If you don't want to use it for sweet recipes, buttermilk is used a lot in Southern USA to marinade chicken. Makes it really tender and gives it a certain flavour. I don't have any recipes off hand, but a quick search for "Buttermilk Chicken" brought up lots of results so hopefully you'll find something you like the look of.0 -

I made 5 batches of butter from 5 x 600 ml tubs of Double Cream I got reduced for 20p each.
It took approximately 10 min to make each batch. One tub at a time.
The first batch was made with just the cream and was quite firm, I will use that for cooking, I added 100 ml of Rice Bran oil to the next batch, (sunflower or olive oil would be just as good.) I also added half teaspoon of salt, just perfect much nicer than Lurpack.
Whip the cream until it peaks then add 100 ml of oil, place the whipped cream in a tupperware tub, it works best if the cream half fills the container, (one with a tight fitting lid).
Now all you do is shunt the container from one hand to the other, moving the contents from side to side as you go, after a while the butter begins to form and it releases the buttermilk. Open the container and have a wee taste, if its too soft , shunt it a little more , empty the contents into a sieve over a bowl and gently squeeze the liquid to release as much of the buttermilk as possible, take care not to press too hard or it will stick to the sieve. Transfer the butter onto a board and shape to fit the container your storing it in, then turn the board over and pop in the butter in the fridge. I used the ones from Home Bargains 5 for 79p.
From the 5 x 600 ml tubs I also got 1 Litre of buttermilk, which I froze most of for making scones.
I made a batch of scones using the first lot of butter I made with some of the buttermilk, absolutely yummy!
Easy to make, great fun! And ... You can freeze it.
If anyone wants the scone recipe I'd be happy to post it.
