Do you have one of those stick blenders?
If so, wrap your canister around with a teatowel to stop it slipping around in your hands and give the contents a good whizz with the stick blender.
Alternatively, if there any way you can extract the solid block in one piece, you can bang it into pieces with a hammer and then put it into a food processor to grind up completely.
I had these problem recently with a jar of Horlicks powder which was three quarters full and it was infuriating because I couldn't risk smashing the glass jar and getting shards of glass in the product.1 -
I've always found that the coffee tastes nasty if you chip bits off.
Agree with the comments regarding damp as above. Make sure you keep the open jar well away from steamy kettles etc and keep lid off for minimal time.
This is one product which may be better bought in smaller quantities if you don't use it very often.

Thanks for your comments, I used the stick blender and it looks kind of back to normal, I may have been a little over-zealous though!
The problem was that OH had taken the coffee fishing with him a few weeks ago, I think. It's usually the only time it gets used. Personally I find instant coffee a bit nasty even when it hasn't solidified! I use 'proper' coffee, right now we're broke so it's a bit of a treat, but I keep it in the freezer to keep it fresh.1 -
I put mine in a (strong) polythene bag and whacked it with a hammer (not so hard that it broke the bag).1

We've managed to get ours back to a fine powder using a cheese grater. Anything else just created chunks and shards. The grater was perfect.2
