How late to book our hol

My fella and I are planning a week away in Dec - cheap and cheerful all inc in Spain or similar.
We have the time booked off work, well I do, he's self employed, we have the funds, and don't have kids, so we could literally book one day and leave the next.
I am wondering if anyone has any experiences of REALLY late deals? We have seen a couple are good value now, but are wondering if we'll grab even more of a bargain leaving it, say, a week before.
I've played about with dates on a few of the main holiday sites and it doesn't look like prices come down that much the closer you leave it to the departure date.

I have never left it as late as booking a day in advance. I've found with package hols they tend to be at their cheapest 4-6 weeks before. After this time they tend to creep back up again. If there is a lowcost flight involved it will almost definately go up in price nearer to the time.
However I have never had a holiday in Spain in December either so Spain might be cheaper. Not sure what the weather will be like. Have you considered somewhere hotter?0 -

Yes, Barbados, Caribbean:rolleyes: etc etc, but our budgets don't stretch that far.
The temperatures look to be reasonable, better than the frozen North.
