I need to make a fruit crumble for Boxing Day. Ideally I would make it now and store it but which is the best way??
I was thinking maybe stew the fruit and freeze it in the dish it will be cooked in. Making the crumble topping and freezing that seperately in a bag. Then on xmas evening I can take both out of the freezer to defrost, put crumble topping on before going into oven to cook.
Or am I better off assembling the whole thing and freezing?

When I make apple and balckberry crumble ... I put everything into a buttered dish, make the topping then wrap in foil, pack in a freezer bag (uncooked!!!)
When needed: -
Remove wrappings and bake from frozen in a preheated oven: 220C/425F/Gas 7 - for about 20 mins.
REDUCE the heat to 190C/375F/Gas 5 and bake for a further 45 mins.

I make a reasonable quantity of crumble topping and store it in an airtight box just in the fridge - it only contains marg, flour and sugar after all. I have found in the past that the crumble topping can go soggy if you freeze it and then defrost it.
The added advantage of having crumble mix in the fridge is you can turn it into shortbread type biscuits very quickly by adding a bit of milk/egg to bind, a litle mixed spice, some lemon juice etc etc.I like to live in cloud cuckoo land :hello:0 -
I'd make up my crumble mixture (including some oats and chopped nuts, and butter rather than marg) and keep it in a plastic bag in the fridge. The fruit mixture can be prepared in advance - but do not cook it or add the sugar or you will have fruit puree instead of a fruit crumble - just store it in the fridge too. Assemble and cook as normal. (Even tinned apricots or peaches taste fabulous topped with a crumble mixture).0

Might be easier separately as you would need a lot of space in the freezer.
Also, would the topping not get soggy?

Hi, I agree with Queenie. When I make either apple or apple and blackberry I assemble the whole thing then put it in the freezer uncooked. Defrost and cook it when I am ready and the crumble mix has never turned out soggy yet. Just remember to put it on the top of your freezer so it freezes as quick as possible. Best of luck.0
