Cheapest place to book Florida Holiday

Hey,

I am looking to bok my Florida holiday I was suppose to go on last year (my gf dislocated her knee day before and we just got the claim back).

We were hoping to book the same hotel hampton pointe inn in Orlando but it seems to be fully booked for the 23rd or 30th May.

Our second choice is http://www.tripadvisor.com/Hotel_Review-g34515-d252356-Reviews-Crowne_Plaza_Orlando_Universal-Orlando_Florida.html

We going to book via Trip Advisor however I was wondering if you knew anywhere cheaper to get the holiday for end of may flying from glasgow and any hotel which are suitable current cost for 2 is £1,629.37 if anyone can help me beat this I would be greatful.

I know I can get this down by booking seperartly but I fear this is not very safe in current climate, plus not sure what happens if I book via credit card the aircraft operator goes bust and I cant go do they cover only the flight or also the hotel? or does my royalties gold travel insurance cover this?
