Hi, does anyone have a good recipe for rice pudding? The kind you make in a pan on the hob, not in the oven.
(I know google has some... but i wanted someone's tried and tested family favourite!! :-/)
I don't have scales but Ido have a measuring jug so it would be a big help if any amounts could be given roughly in tablespoons/ml etc... I have proper pudding rice.. whole milk.

Here's mine - put it in the pan, slowly bring to boil then simmer covered till tender and thicker.
1 pint milk
1/4 cup pudding rice (I know it doesn't sound a lot but it is enough)
3 level tblespoon sugar
optional extras:
slivered almonds
ground almonds
grated nutmeg
blob of butter (not marg)0 -
I do mine in oven - 3 tablespoons of pudding rice for every pint of milk (full fat best here) and 1-2 tablespoons sugar. Add an ounce of butter and freshly grated nutmeg (optional).
Bake in low oven - 100 - 150 C - depending on what else you have in the oven. After an hour or so, stir in the skin and bake for another half hour. These times are for a two pint pudding - check sooner for smaller quantities.

mine same as chloe's, but we occaisionally add cocoa powder for choc rice pud, which the kids love. (2 lvl tbsp)0

That's ok magnateuse - it's just my mum always makes it in the oven (how can you stir in the skin, it's the best bit, all crispy and mm) and I don't have an ovenThey call me Mr Pig!0 -

No,no,no ;D, you stir in the skin when it's half cooked. You still get the skin at the end - I make mine in a lasagne dish so there's more skin for everyone to fight over!0

i do lasgne dish too, but my kids don't like skin, so i get it all. ;D0

yummy, and easy too. i like mine done with less milk, then left to set in fridge, (about 3/4 pint) is yummy.0
