I'm sure I saw a recipe for ice cream that was made with custard and cream somewhere a while ago, but I can't find it. Does anyone remember seeing this or know what it was?

I know of a recipe for Lemon curd ice cream:
1 tub of fresh custard
1 tub of marscapone
1 jar of lemon curd
Juice of 1 fresh lemon
Mix all the ingredients together well and place in a clean empty ice cream tub and freeze - and that's it! Could also add crushed meringue to it for a "Lemon meringue" ice cream0 -
Thanks for that one, it sounds delicious. I might give it a try at the weekend :-) I wish I could remember the custard one - maybe I imagined it! I might try combining the custard and some cream and see what happens.

the "custard" was egg yolks and double cream - what makes ice cream delicious is the absence of ice crystals plus the taste.
for a truly decadent treat - it's basically egg yolks, a lot of sugar (gently heated in a pan to dissolve the sugar), two good vanilla pods.
at this point you need either an icecream machine or a good freezer.
once the mixture has cooled, start to blend in the double cream. gently!
chill
stir
chill / stir
(or check the ice cream machine)
and stir again (taste!!)

Aha! Rosemary Shrager was on the TV when I got to my aunt's house earlier, and they made ice cream with custard. Hope this proves useful:

LEMON CURD ICE CREAM (best made at least the day before)
Tin of custard £0.19 (Tesco Value Ready to serve custard 396g £0.19)
500g Greek Yoghurt £0.95 (Tesco Greek Style Natural Yoghurt 500g £0.95)
1/3rd jar Lemon Curd £0.12 (Tesco Value Lemon Curd 411g £.035)
TOTAL £1.26
Whip all the ingredients together and freeze for a few hours (or until it starts to go hard) in a shallow container. Mix up the semi frozen mixture with a fork and then put back in the freezer to go hard.0 -
Thanks to everyone for your help :-) What I should have said in my original post was that I meant ready made custard, not the custard you make from scratch - doh! I've made ice cream from scratch in the past, but I had bought a tub of ready made custard from Mr Ts reduced because I thought I had a note of 'that recipe' and was going to whip up a batch. The lemon curd one sounds wonderful though so I think I'll get some lemon curd and give it a go.

How about this one
White Chocolate and Baileys Ice cream
Melt 100g (3 1/2 oz) roughly chopped white chocolate in a heatproof bowl over a pan of gently simmering water, making sure the base of the bowl doesn't touch the water.
Mix together 500g carton fresh vanilla custard and 71 ml baileys (a mini bottle) in a large bowl. Beat in the warm chocolate, then gently fold in 284ml carton extra-thick double cream. Spoon the mixture into six 200ml (7 fl oz) ramekins or three ice cube trays and freeze for at least 2 hours or overnight. Soften at room temperature for 10 minutes. If you used ice cube trays, turn out the cubes of ice cream into six tall glasses. Decorate with thin shreds of orange zest and some pared white chocolate.
This also seems an easy recipe but doesn't use custard
1 pint (570ml) double cream
4 tablespoons milk
2 teaspoons vanilla extract
10 level tablespoons sifted icing sugar ( Seems a lot I know but it doesn't taste too sweet)
Beat the cream and milk together in a bowl until the mixture has thickened slightly. Add the vanilla extract and icing sugar and mix gently until well combined. Pour into a tray or carton and place in the freezer for approx 1 hour or until the edges of the mixture have frozen. Empty back into a bowl and mix lightly then return to container and freeze until firm.
Would imagine you could fold in frozen berries etc

Has anyone made ice cream using ready made custard without adding cream?
I have made ice-cream the old school way years ago by making a homemade custard first but I thought it might be easier to take the lazy option and buy those ready made cartons of custard (especially if I see them reduced). Although they are not cheap, they are still a lot cheaper than premium ice-cream like G&B or B&J etc.
But then on searching here and on Google for ice cream using ready made custard I found recipes with cream added to them.
Can I just put some ready made custard (no cream) in the ice-cream machine? (Trying to make a slightly healthier version you see!)
By ready made custard I mean the posh stuff like this

I have a very easy recipe for Baileys ice-cream, it just a carton of cream, whipped, a tin of condensed milk, Baileys and a crushed crunchie bar, mix together and freeze (no ice cream machine required) - can look up the exact quantities if you like.
