She describes one of my favorite ways to have pig trotters. It's also very good made with pork belly.0 -
Are they nice really?
I know it's sounds horrible but I find the thought of them repulsive and I know I have to get my head round it.
My mom eats them and says they are lovely but, oh I don't know, I'm a wuss I guess.

Come on Barneysmom, if I can do it you can too. I'm going to do mine next week and I'll make sure I put up on here what I did and how it went.0 -
I remember cooking these for my late husband years ago, he got a taste for them when he was stationed in Germany on National sevice after WW2, circa 1950. I remember cooking them for it seemed hours in a pot with onions and carrots and leeks .He adored them , me, I couldn't abide them, but whatever floats your boat. He did have some very strange tastes, he also loved sprats cooked in the frying pan ,heads and tails and all, also mackerel cooked in the oven in vinegar. My late ma-in-law had a lot to answer for. I can't stand the smell of vinegar ,but it kept him happy, so I put up with it0

It will be the understatement of the year to say I freaked out when I saw the things. I was thinking of the pork equivalent of lamb shanks. Anyway, I don't know what to do you with them. Do you guys have any tried and true recipes?0

Mmmmm, try googling a recipe for 'Souse'. It's a West Indian recipe, boil the trotters with celery, thyme, bay, cool, remove meat from bone and chop, slice cucumber, add to dish with some of the reserved liqor, fresh lemon or lime juice and some fresh chopped chilli. leave to cool. Gorgeous. Friend of mine used to make it for me, but I haven't seen trotters for ages!0

There was an episode a while back, not sure when, sorry
on come dine with me, where the main meal one night was from pigs trotters. Think the city/town that week was Ayrshire and there was only one man and he was doing the pig trotter meal, as the woman were quite bemused with the food as he was serving them that to go with champagne :rotfl:think it was a joint win (two woman) that episode. Anyway sorry for rambling but if you go to the channel 4 website they may have that episode or the recipe available.

Trotters are the pig's feet not the shank/hock which is meatier. I have a couple in my freezer which I'm not sure what to do with either.
One of the simplest things to do with trotters is to add them to a pot of stock. The stock will set like jelly because of all the gelatine in the trotters and of course taste fantastic.
I've been thinking about doing this with them.0 -
i have cooked them for dh before (made my stomach turn!!) i boiled them up for hours in water with sliced carrots, onions and various herbs. i then severed them on a bed on lentils.
what i would suggest is plucking all the stray hairs off, (i didn't and dh was picking them out the meal!!!)
good luck, they are very very cheap so hope you like them.0
