    baked potato middles make the best best gnocchi (in my humble opinion!) as the potato is much dryer than steamed/boiled and you could then drizzle the skins with oil, bake until crisp and eat with dippy things. There was a gnocchi thread about somewhere yesterday.
  • cut in half then into about 4 wedges each half to make...yep... potato wedges...sprinkle with salt/garlic/herbs/chilli whatever you want and bake in the oven till brown and crispy...
  • freeze them and when you next need a baked spud just need to micro for a short time to cook/defrost

    or go with tillymama's nomnomnom idea :D

    Freeze them,
    slice and add to onion and butter to make butter pie,
    chop and use in a meat and potato pie,
    slice and add to frittata,
    mash and use to top corned beef and onion,
    slice thickly to make fritters,
    make leek and potato soup

    if you mash them, keep the skins for roasting next time you have the oven on and fill with bacon, onion and cheese.Yum yum.

    Thanks for all the suggestions, I think I will go with Tillymama's idea for tonight as I have pancetta cubes and cheese already in the fridge. I will definitely keep the other suggestions for another times as they all sound yummy!
    Can't wait to escape from the office and go home for my tea now!!

    This thread has got me wanting some baked potatoes now. Will make a note of these tips as quite often flatmate eats the ready meal ones and has some leftover he never eats and I'm fed up of having them cold for dinner the next night.. Thanks folks.

    That reminds me of the fried potato cakes my mum used to make with leftover mash - mmmmm!! I'm sure they'd work equally well with the insides of baked potatoes... I'm going to have to go and find a recipe now! :drool:
