leftover jacket spuds

ok, i could mash some cheese into them and chuck them back in the oven for dinner tomorrow. But does anyone have something a bit more interesting??

    I have diced them with some corned beef and some chopped fried onions and cook them on low in a heavy frying pan for half an hour to have them as a version of corned beef hash.

    I have thrown them in curries as a vegetable or made Bombay Potato with them.

    I have used them in Spanish Omelette instead of plain cooked potato.

    I have chopped and mashed the innards to make potato cakes with an egg - sometimes add some cooked bacon for breakfast and have them on toast. The skins I grate some cheese over and add some chopped cooked bacon or jalapenos for loaded potato skins on movie nights.

    Any more for any more? :D

    I could make it better myself at home. All I need is a small aubergine...

    We cut them into big wedges and saute in a small amount of olive oil with garlic and rosemary, if you have any....then eat with some cold meat/salad what ever is in the fridge. I dont think reheated jacket potatoes taste great if just reheated as they are.

    Cut into wedges and deep fat fry for crispy yummy wedges, serve with dip of choice.

    Hi jorichste,

    I love filled baked potatoes but if you don't fancy that then I'd go with potato wedges.

    You could also scoop out the insides and use it to make fishcakes or make my favourite...potato bread.

    -Scoop out the potato from the jackets

    -Add a little salt

    -Add a knob of butter and stir through until completely melted

    -Start to add the flour and mix it into the mash (I use a large metal spoon to start off with, but usually end up using my hands)

    -Continue to add flour until the mix feels like a stiff dough

    -Divide the dough into balls

    -Roll into circles that will fit into your frying pan (about 5mm thick)

    -Cut the circle into quarters

    -Lightly dust both sides with flour

    -Preheat the frying pan (or flat griddle if you have one) to a medium heat

    -Dry fry the potato bread (no oil or butter). At this stage you just want to cook the dough rather than fry it.

    -Turn occasionally. It’s ready when it’s beginning to brown in patches.

    -Cool on a wire rack.

    At first just try making one piece at a time so that if the consistency isn’t quite right you can knead more flour into your dough.

    Potato bread will keep in the fridge for a couple of days and freezes very well. I normally make it in batches and freeze.

    For variations, add black pepper or chives

    To cook: Preheat frying pan to hot, fry in butter and serve immediately.

    Mash the innards up, mix with mashed parsnip and a little crushed cumin. Load back in the skins and dot with butter/marg, then bake.

    You could a little lit of bacon or chese, but these are really tasty as they are.

    I have two jacket potatoes left over from the other night's tea (had guests so overestimated the portions a bit!). The only thing I can think of to do with them is cut them up and fry them in a bit of oil, perhaps with a chopped onion.
    I wondered if anyone had any other recipes/suggestions for how I can use them up?

  • I would scoop out the middles and mix with cheese and cooked bacon, then pop the filling back in and bake in the oven again to warm through.
