    Click Scheduler
    Highlight Complete system scan
    Select symbol above with arrow "edit selected job"
    Select daily time for scan to take place.

    Technically you cant set an actual time of day to 'update' (Though you can to schedule a scan)
    Though it can be done by changing the update 'period' twice over

    Yes you can

    Go into Administration, choose scheduler. Then choose a blank line and "Insert New Job", choose a name, then select "Update job" as the type, it gives you an option of a daily job, weekly, or at a set interval e.g. every 24 hours. The daily and weekly jobs can be set at the time you wish
