Technically you cant set an actual time of day to 'update' (Though you can to schedule a scan)

Yes you can
Go into Administration, choose scheduler. Then choose a blank line and "Insert New Job", choose a name, then select "Update job" as the type, it gives you an option of a daily job, weekly, or at a set interval e.g. every 24 hours. The daily and weekly jobs can be set at the time you wish0 -
