Best time for getting a late deal over new year?

Need a bit of help with a holiday for my girlfriend and me. I am looking at getting away with her for a sun/sea/sand holiday over new year's day. Aiming for a long haul trip where we can have good weather and crystal clear water, I have a budget of about £2000 for 7-10 days.

When is the best time to book for getting a good deal, I would prefer to play it a bit safe but there must be a 'sweet spot' for these types of bookings?

    1st/2nd Jan are peak days for travel, even if there is availability, I don't think they will off load holidays as a late cheap deal because demand is high.

    Have a good search for a holiday now, you may find something.

    Now's the time.
    I've had three emails of impending sales over the last two days including Swiss Air. It seems that a few sales are starting at midnight on Halloween.

    Sorry, should of been more clear. I would like to be away over new year's day, but will happily fly anytime after boxing day.

    31st December is a cheaper day to travel going overnight.
