Hi there. Mostly, no. Most tracks on iTunes are DRM-protected AAC (MP4) tracks which only work on iPods, iPhones, Apple TV and on the computer. These cannot be used with other players UNLESS you burn the tracks to an audio CD as music and then re-encode them as MP3s which work anywhere. This is prefectly legal, just a pain to do.
HOWEVER, some tracks on iTunes are "iTunes Plus" -- EMI music only at the moment. These are unprotected AAC (MP4) tracks which work on ANY music player that supports the MP4 format. Additionally, you can use iTunes itself to convert them to standard MP3 files which work on any player. No burning CDs required.
I hope that makes some sense! Look out for the plus symbols next to the price information and you should be OK.
Cheers
