hard cheese freezes better than soft cheese.

I always freeze mild cheddar, you have to wrap it really well in cling film. Mature cheese goes a bit crumbly and loses it's colour a bit, but it tastes ok.Bulletproof0

We often bring back foods from the Netherlands as we can't get them over here.
We usually bring back quite a bit if yummy Dutch cheese (none of that rubbery edam rubbish) that we freeze with only a small deteriation in texture and no effect on taste.
We have found that it helps if the cheese is vacuum packed (prevents it drying out).Better to die on your feet than to live on your knees!0 -
It's also worth cutting the cheese into smaller pieces before freezing. THat way you can take out what you need each time, rather than having to eat the whole lot! :-)Nice to save.0

Thanks for raising that one Heldaz ... often wondered myself as certain cheeses seem to go "off" so quickly in the fridge (and of course it never tells you if you can freeze it or not on the packet).
Thanks to everyone's useful replies, I now know what to do with the surplus of cheddar in the fridge! ;DWins since 2009 = £17,600MANY THANKS TO ALL OPS0 -
Thanks Heldaz for raising this issue, I am always having to throw cheese out as I love the stuff, but always buy far too much. really handy tips all and thanks to Munki andMissprice for those really good tips, I would have just thrown the block in without thinkin'. ::) ;D0

Newbie to board here, so please allow for me repeating any old tips!
Grate block of cheddar and freeze in bags or tupperware, and use as required. Defrosts very quickly when grated, and saves grating at the last minute. Good to do when you have the food processor out, or if you have someone about that actually likes grating cheese!
I keep parmesan wrapped in foil and then in bag in freezer, grate straight from frozen. Saves it going off in the fridge, and if you are only grating a little, you can put it back in the freezer - quickly!
What a great site, and only skimming over surface here so far.
Much impressed
