so the tv upscales sd pictures? does it upscale everything? in my opinion our tv does not seem to upscale regular tv but the picture on our upscaling dvd player is miles better than what it was like on the previous tv.

if it is possible to benefit from 100hz then when would you say that is most likely to be? when watching sport? if yes then does the source also need to be hd for the 100hz to work well or would it work on a sd picture?

Yes, everything you watch is SCALED to your tv. I know you thought long and hard about your purchase so assume you chose a full 1080 set? So SD pictures will be internally scaled to that. Ditto any other picture formats, they will all be scaled to whatever number of pixels your screen is.
So for example, if you had a screen with 768 pixels, 1080 blu rays would be internally DOWNSCALED, whilst sd and dvds would be UPSCALED.

Bare in mind also, a brand new tv will take a while to look its best (So for example, if you found your dvd player upscaled better, in a months time that might no longer be true! ~ so retest in a month or 2)

people may say just try different settings but there are so many different settings and therefore so many different combinations that it becomes hard to judge.

Since your a member at AVForums, why don't you contact one of the calibration guys to set it up - you can arrange a group discount with others in your area.
