Instead of taleggio cheese?

I've picked up some cheap portobello mushrooms and was going to cook them in a Jamie Oliver recipe with tomato sauce - the recipe uses talegio (sp?) which I don't have and can't get. Any good ideas for a substitute? I was thinking of getting a ball of value mozarella and mixing with some cheddar.

  • I've successfully substituted gruyere, as it has melts into sauces nicely, in a similar way to taleggio ;) Sounds like mozarella will do, too :D

    This is what I did in the end -

    Made basic tomato sauce with three tins of value tomatoes, oil, onion, garlic, sugar and red wine vinegar. Put in a large lasagne dish and placed portobellos on top. Topped this with a bit of strong cheddar grated and one ball of mozzarella cheese torn up. In a separate bowl, tore up two slices of stale bread and drizzled on a bit of olive oil, left it for a bit. Scattered this on top with some fresh thyme from the garden. Baked in a hot oven for 20 minutes. Served this with some sliced boiled potatoes.

    I told the kids it was called pizza bake as that's how it smelled. It went down well and served 8 people happily for about £3.00 including the potatoes.
