I'd use some timber batons to create a simple frame and then fix some plywood on before filling nail/screw holes and paint over. To avoid the needs for making good you could fix the ply with No Nails. In the kitchen we used MDF for boxing in from ceiling to worktop but it was in an area unlikely to get wet and the splashback area above the worktop was tiled.
For an alternative idea you could use some uPVC cladding. Or if your tiling the room anyway you could tile over the boxing-in too.
I'm planning on boxing-in some pipework in our bathroom (still got to run the pipework yet!) and was going to go with plywood and paint.
